There is no back room. The 12-kilo Probat sits a few steps from the counter, jute bags stacked by origin behind it, and the cupping table by the window where every new lot gets tasted before it goes on the menu.
The wall of tide charts has been there since 2014. Sam still checks the morning tide out of habit before the first batch charges. When the fog is in, the whole wharf smells like the roast.
